This is one of my current favourites as an alternative milk option for your porridge, tea, to use in cooking etc instead of dairy. Nut milks have become very popular of late as people are looking for alternatives to dairy. However I find that most of the shop bought nut milks have very little nuts in ironically ( if you look at the content on the label). This is so easy to make!
Cashews are high in protein and essential fats so will help to provide that satiety at breakfast time. They are rich in “heart-friendly” monounsaturated-fatty acids and essential fatty acids which help lower harmful LDL-cholesterol while increasing good HDL cholesterol in the blood. All nuts are so good for us but cashews are particularly rich in minerals, especially manganese, potassium, copper, iron, magnesium, zinc, and selenium. A handful of cashew nuts a day in the diet would provide enough of these minerals. They are also known as 'brain boosters!
Simply soak 250g of cashews in cold water for at least 3 hours or overnight. Strain the water and then the soaked cashews along with 1 litre of cold water to your Nutribullet or Vitamix and blend. Store in an air tight container in the fridge. I use a jug /pitcher with a lid and this will last in the fridge up to 5 days. If you don't have a Nutribullet or Vitamix then can use your blender but may need to strain the milk through a muslin bag.
This is delicious on its own or you can add some raw honey to make a sweeter drink.
