Baked Avocado Eggs

This is my current flavour of the month as I am an avocado and egg lover and always have them in the house! It is such a perfect combination.


It is a great quick and easy lunch or a very nutritious and filling breakfast, full of protein and good fats to keep you fuller for longer. It is also very skin friendly, as well as the good fats in the avocado, eggs are rich in sulphur and protein which is also great for hair skin and nails.


You can garnish with whatever you like, chopped bacon bits as in the picture or I quite like chopped chives/parsley or Tabasaco or Worcester sauce depending on what takes your fancy.


Please don’t worry about the fat content as avocados are full of essential fats which are great for your skin, hormones , heart , metabolism and overall health. Studies have proven that those who include avocados in their daily diets tend to manage their weight better than those who don’t eat them at all. This is to do with the combination of protein and good fats which stop you craving sugary and starchy foods (which is what breakfast cereals make you do) mid-morning!

Recipe

  • Take 1 ripe Avocado halved ( stone removed)

  • Scoop out a little of the flesh from each half and eat and then crack 2 eggs into the centre of each half. Add Tabasco/Worcester sauce or chopped bacon if using.

  • Place under a hot grill for approximately 10 minutes until the eggs look done.

  • Garnish with chopped chives or parsley and enjoy!
