Katie's Bircher Muesli

This is my well tried and tested version of the well known Bircher 'soaked overnight' muesli so delicious with natural Greek yogurt, mixed berries or as it is.

Serves 4

100 g Oats ( I use Gluten Free)

50g quinoa flakes

25 g raisins

2 tbps pumpkin seeds

2 tbsp. chia seeds

30ml apple juice

1 grated pear ( skin on - so organic preferred)

1 scoop good quality vegan protein powder ( optional)

2 x handfuls of blueberries

300ml almond milk or cashew milk or soya milk

1 tbsp maple syrup or raw honey

Zest of half a lemon

Add all these ingredients to large glass bowl and leave to soak overnight. In the morning if it look rather solid add more liquid as the chia seeds will have soaked it all up!

Enjoy with mixed berry compote or live Greek yoghurt.
